Burnt Broccoli

Do you struggle with finding ways to get your veggies in? Maybe you’re looking for ways to get your kiddos to eat more of those vegetables that they really need. This “Burnt Broccoli” recipe is one that my kids absolutely love. My kids lovingly tagged this one with it’s super appealing name the first time I made it for them. They asked why we were eating burnt broccoli for dinner. Now, they ask for it at least once a week and the best part of it all, it is so incredibly easy to make! You can make as much or as little as you need, depending on the crowd you are feeding. Just don’t let the name deter you from giving this one a try. It really is the BEST!

Burnt Broccoli

  • 6-8 cups of chopped broccoli (cut into bite sized pieces)
  • 1-4 cup Olive Oil
  • 1-2 tbsp Sea Salt

Start by turning your oven broiler on to hi. Spread chopped broccoli onto a baking pan that will fit the amount of broccoli you are making. I use a cookie sheet when cooking the 6-8 cups of broccoli. If you are making less, you can use a smaller pan. Drizzle olive oil over the broccoli and toss until the vegetable is lightly coated. Sprinkle with sea salt and place in your oven on the rack closest to your broiler.

You will need to keep a really close eye on it at this point. Broiling vegetables doesn’t take long, but the time can vary, dependent upon your altitude and the size you cut your broccoli. I live at around 5,000 feet elevation and I cook the broccoli for about 10 minutes. You will cook it just until the edges of your broccoli tops turn brown.
