Cowboy Cookies

Shortly after my husband and I started dating, he spent a couple of years in Oklahoma to serve a mission for the church we attend. While he was away, I liked to send him care packages with some goodies, or a fun surprise. It was during that time that I came up with this recipe. My husband still reminds me that they were his favorite (and still are). I named these “Cowboy Cookies” for the obvious reason of his time in Oklahoma and the name just kind of stuck!

Cowboy Cookies

  • 1 cup butter
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 2 cups oats
  • 2 cups flour
  • 1 1/2 cups chocolate chips
  • 1 cup chopped nuts (optional)

Cream together butter and both granulated sugar and white sugar. Add eggs, vanilla, soda, salt, and baking powder. Mix well. Stir in oats and flour. Fold in chocolate chips. Scoop onto a cookie sheet in tablespoon-sized balls.

Bake at 350 degrees for 8-10 minutes. Let rest on pan for 1 minute, then carefully remove to a cooling rack. Do not let the cookies cool completely on the pan, as they will continue to bake on the bottom from the heat of the pan.
