Warm and Cozy Chicken Tortilla Soup

Fall is officially here!! That also means that “Soup Season” is just around the corner. Yes, “Soup Season” is an official season in our home and makes me so incredibly happy. My husband teases me that I would make and eat soup all year long if he would let me. There’s just something about the way that a warm meal makes you feel, and the comfort it brings to your soul! I’ll warn you now, I just may be sharing a few soup recipes on this site.

This Chicken Tortilla Soup is a soup that my husband loves and my kids like anything that they can eat with chips. You can control the amount of spice you add to this soup and tone it down a bit by adding a little sour cream, when ready to serve. Just remember to only add the cheese and sour cream to each dish, as the dairy does not reheat well in leftovers.

Warm and Cozy Chicken Tortilla Soup

  • 1/3 cup chopped onion
  • 3 cloves garlic – minced
  • 3/4 tsp cumin
  • 3/4 tsp oregano
  • 1/4 tsp chili powder (you can add more if you want more heat)
  • 1 tbsp oil
  • 1 can diced tomatoes with chilies
  • 10 cups chicken broth
  • 2/3 cooked chicken breasts – shredded
  • sour cream and shredded cheese for garnish
  • corn or flour tortilla chips for garnish
  • lime slices (optional)

Saute onion, garlic and spices in oil for 1-2 minutes. In a large soup pot, combine diced tomatoes, chicken broth, and saute onion mixture. Stir in shredded chicken . Simmer for 15-20 minutes.

Serve topped with shredded cheese, a dollop of sour cream, and a squirt of lime juice. You can also garnish with some crushed tortilla chips.
