We LOVE a good breakfast muffin and these are so easy to put together, you’ll wonder why you haven’t made them before now!
Blueberry Crumb Muffins
- 1 1/2 cup flour
- 3/4 cup sugar
- 1/2 tsp salt
- 2 tsp baking powder
- 1/3 cup coconut oil
- 1 egg
- 1/3 cup milk
- 1 cup blueberries
Crumb Topping:
- 2 tbsp white sugar
- 2 tbsp brown sugar
- 2 tbsp flour
- 2 tbsp cold butter
- 3/4 tsp cinnamon
Mix together first 8 ingredients for muffins, adding blueberries last. Fill muffin cups 3/4 full and sprinkle with crumb topping mixture. Bake at 400 degrees for 15-20 min.
