Caprese Chicken Skillet Dinner

Skillet dinners are one my favorite things. Minimal clean up and easy to serve. This caprese chicken dinner is so easy to make and tastes like you’ve been in the kitchen for hours. Who wants that? Well, probably not on those nights when you have a few things to do, that’s for sure.

Caprese Chicken Skillet Dinner

  • 4-6 chicken breasts
  • 1 pint cherry tomatoes – halved
  • 2-3 tbsp fresh minced basil
  • 1 tbsp minced garlic
  • Olive oil
  • Slat and pepper
  • Balsamic vinegar

Drizzle olive oil in pan to coat. Season chicken with salt and pepper. Cook chicken in skillet over medium heat until 165 degrees, internally. Remove from pan, onto a plate and set aside (cover with foil to keep warm).

Turn heat of pan down to medium-low and sauté minced garlic until fragrant (about a minute or so), being careful not to burn. Add tomatoes and sauté for 2 minutes, or until tomatoes start to soften.

Add chicken back to skillet and turn the heat back to medium. Top chicken with minced basil and drizzle with balsamic vinegar, adding as much or as little as you’d like.

Serve over your favorite pasta, or cooked rice. We like to use the Seeds of Change wild rice and quinoa packs from Costco.
