Chicken Salad Sandwiches

This salad is perfect for potlucks, picnics, or a Saturday afternoon lunch. We’ve used this many times for baby showers, bridal showers, or even a quick ladies lunch.

Chicken Salad Sandwiches

  • 1 cup whipping cream
  • 8 oz pkg cream cheese
  • 1/2 cup mayo
  • 1/2 cup miracle whip
  • 2 tsp minced onion
  • 2 tsp salt
  • 5 cups cooked chicken, diced
  • 2 cups diced celery
  • 2 cups seedless grapes, halved
  • 2 cups chopped cashews

In blender, mix together whipping cream, cream cheese, mayo, miracle whip, salt, and diced onion. Mix on low speed, as to not whip your cream too much. In a separate bowl, mix chicken, celery, grapes, and cashews. Fold the cream and mayo mixture into the chicken mixture until incorporated well. Chill for 2 hours. Serve on a sliced croissant roll. Add a lettuce leave, if desired.

*If you do not plan to serve this within a few hours, wait to add the nuts until just before serving.

*You can use pecans or walnuts in place of the cashews, or a mixture of all.
