Chicken Tortilla Soup

Who’s ready for some cozy soups?

We’ve had some drizzly weather today and it has made me even more ready for what we refer to as “soup weather”.
This Chicken Tortilla Soup is so easy to throw together, you’re sure to add it to your menu rotation!

Chicken Tortilla Soup

  • 1 lb cubed or shredded cooked chicken
  • 1- 32 oz can diced tomatoes
  • 8 cups low-sodium chicken broth
  • 1- 32 oz can northern beans (rinsed)
  • 1- 32 oz can chili beans (rinsed)
  • 2- 16 oz cans whole kernel corn (drained)
  • 1 small can diced green chilies
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp oregano
  • 1/2 tsp onion flakes

Mix all ingredients together, and cook on low in a crock pot for 8-10 hours. You can also simmer this on the stovetop for a couple of hours, in place of the crock pot.
We like this served with tortilla chips, and topped with a bit of shredded cheese, and a small scoop of sour cream (if you can tolerate the dairy).
