Chocolate Chocolate Chip Zucchini Bread

That’s right, I said it twice! Need a good chocolate fix, while trying to avoid some of that “goodie guilt”? This quick bread recipe is a great way to add some of those great nutrients from the delicious veggie, satisfy your sweet tooth, and keep your bread from drying out as well.

Chocolate Chocolate Chip Zucchini Bread

  • 1 cup vegetable oil
  • 3 eggs
  • 2 tbsp cocoa powder
  • 2 cups sugar
  • 2 cups grated zucchini
  • 1 tsp vanilla
  • 3 cups flour
  • 1 tsp salt
  • 1 tsp cinnamon
  • 1/4 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 cup chocolate chips
  • 1 cup chopped pecans or walnuts (optional)

Combine oil, eggs, cocoa powder, and sugar. Mix well. Stir in zucchini and vanilla. Mix in salt, baking powder, and baking soda. Slowly add flour, being careful not to overmix. Fold in chocolate chips and nuts, if desired. Spoon into greased 9×5 inch bread pans. Bake at 350 degrees for 1 hour, or until toothpick inserted into the center comes out clean.
