This time of the year, we tend to want to have a dinner that is filling and warms the soul. However, a lot of those types of meals tend to take a little bit of time to put together and the hours in the day don not always agree with that kind of cooking plans. I’m here to tell you that this Hearty Maple Stew will suffice those needs, and save you time as well.
We make this in the crock pot, but if you are familiar with Instantpot conversion times, you could easily convert this recipe to fit. For me, the crock pot makes it a quick “fix and forget” kind of recipe. I throw the ingredients in after the kids head to school and by dinnertime, everything is perfectly ready! Give this one a try. We like it best pared with THESE breadsticks, but a homemade roll would be delicious as well!
Hearty Maple Stew
- 1 lb maple flavored ground sausage
- 6-8 red potatoes
- 2 celery stalks, chopped
- 1 small bag of carrots
- 1/2 yellow onion
- 1 red pepper
- 1 large (family sized) can cream of chicken soup
- 3 cups milk
- 2 cups chicken broth
Brown sausage and drain grease. Chop all vegetables. We leave the carrots a little larger, but dice/fine chop the rest. Place cooked sausage and vegetables into a crockpot and set on low. In a medium sized mixing bowl, whisk together large can of condensed soup mixture with milk and chicken broth. Pour soup mixture over vegetable/sausage mixture and stir well. Cook on low for 6-8 hours. If the stew is too thick, you can add more milk and let it warm through before serving.
