Instant Pot Hawaiian Chicken

This dinner recipe is one of my go-to meals on those nights when I need something quick and delicious. The Instant Pot makes a quick fix, and if you would rather have a slow cooker option, a couple of small time adjustments make this easy to accommodate. Give this a try sometime this upcoming week. You won’t be disappointed.

Instant Pot Hawaiian Chicken

  • 4 boneless chicken breasts
  • 3 cups chicken or bone broth
  • 1 cup chopped onion
  • 1 cup chopped green pepper
  • 1 cup BBQ sauce
  • 3-4 cups cooked rice

Cook chicken breasts with broth on high pressure, in the Instant Pot for 10-12 minutes, or until cooked through. Release pressure, using the quick release method. Check chicken to ensure it is cooked to 165 degrees, internally. If it needs more time, repressure the Instant Pot and cook for additional time.

Once chicken is cooked through, remove chicken, and discard all but 1 cup of the broth. Stir BBQ sauce into the reserved broth. Chop chicken into bite sized pieces, add chopped vegetables, and stir in BBQ sauce/broth mixture. Cook mixture in the Instant Pot for 4-5 minutes, on high pressure.

Serve warm, over cooked rice.
