Jammy Muffins

Muffins are a family favorite in our home. As a mom, I love them because they are super simple to whip up, and any leftovers keep well for the next couple of days. I will warn you though, once your family tries these delicious treats, there won’t be many muffins leftover to enjoy later on. If you are looking for extras, you could easily double or triple the recipe for a larger crowd.

We have tired all kinds of different flavors of jam in this recipe and while we have yet to find one we absolutely don’t like, our homemade strawberry freezer jam has made the top of the list! Let me know what flavors you try and most importantly, which of those are your favorite.

Jammy Muffins

  • 1/3 cup butter
  • 1/2 cup granulated sugar
  • 1 egg
  • 1/2 tsp salt
  • 2 tsp baking powder
  • 1/8 tsp ground cinnamon
  • 1 2/3 cup flour
  • 2 cups of your favorite jam
  • 1 cup chopped walnuts (optional)

Cream together butter and sugar. Add egg and mix well. Stir in salt, powder, and cinnamon. Mix in flour just until incorporated, being careful not to overmix. Spoon muffin mixture into greased muffin tins, filling each muffin cup 2/3 full of batter. add 1 tsp of jam on top of each muffin, pressing the batter slightly into the batter. Sprinkle with chopped nuts.

Bake at 400 degrees for 20-25 minutes.
