This dinner recipe is perfect for those Summer days when you want something filling, but not heavy. Something full of flavor, but easy to put together. Something to feed your family, without breaking the bank. Trust me when I tell you that this will be a new family favorite!
Mandarin Chicken Casserole
- 1 1/2 cups uncooked long grain rice (not minute rice)
- 4 cups cooked chicken breasts – diced
- 2 cups orange juice
- 1 cup water
- 1 tsp chicken bouillon
- 1 tsp black pepper
- 2 15oz cans mandarin oranges (drained)
- 1/2 cup sliced mushrooms (optional)
- paprika and minced parsley to garnish
Spread rice in a greased, shallow 9×13 casserole dish. Top with diced chicken pieces. In a separate bowl, mix together orange juice, water, bouillon, and black pepper. Pour mixture over chicken/rice mixture. if you would like to use mushrooms, sprinkle those in as well (my family doesn’t care for them as much so we leave them out).
Cover with aluminum foil and bake at 350 degrees for 45-50 minutes or until rice is tender. Do not over bake!
Remove pan from oven. Sprinkle oranges over the top and garnish with a sprinkling of parsley and paprika.
