We have a serious peanut butter addiction in our family. These Peanut Butter Fingers are an all-time favorite and I knew it was meant to be when, during our dating years, I discovered my husband’s family recipe, and my own family recipe were exactly the same!
You’ll notice the recipe calls for both butter and margarine. I’ve found that the margarine gives you a softer bar in this recipe, and the butter helps the flavor of the icing. You’re welcome to replace them, if you’d like, but keep in mind you may get a different outcome of the texture/consistency of the bars.
Peanut Butter Fingers
- 1 cup margarine
- 1/2 cup white sugar
- 1 cup brown sugar
- 2 eggs
- 1 tsp vanilla
- 1 cup peanut butter (we use creamy but crunch works great too!)
- 1/2 tsp salt
- 1 tsp baking powder
- 2 cups oats
- 2 cups flour
- 1 cup peanut butter (for topping)
- 1 stick butter
- 1 tbsp milk
- 2 tbsp cocoa powder
- 1 tsp vanilla
- 2 cups powdered sugar
Mix together margarine and sugars until creamy. Add in eggs and mix well. Add vanilla, peanut butter, salt, and baking powder. Mix until peanut butter is Incorporated. Stir in oats and flour. You will have a fairly stiff dough.
Grease a cookie sheet and press dough mixture evenly into the pan. Bake at 350 degrees for 15-18 minutes. Do NOT over bake!
Cool bars until luke-warm and spread remaining peanut butter evenly over the top.
In a medium saucepan, melt butter. Remove from heat and mix in the milk, cocoa powder, and vanilla. Whisk in powdered sugar until there are no lumps. Your icing will look a bit runny, but that’s ok. It will set as it cools. Spread evenly over the top of your peanut butter topped bars and let cool until icing is fully set. Cut into bars to serve.
