Strawberry Apricot Jam

This jam is, by far, one of our family favorites. It is so easy to make and uses a special kid-favorite ingredient in place of the traditional pectin. Once you try this you will definitely be hooked!

Strawberry Apricot Jam

  • 8 cups ground apricots (wash, pit, and grind with skins on)
  • 10 cups sugar
  • 1/2 cup lemon juice
  • 2 pints strawberries (stemmed and diced)
  • 2 large packages strawberry flavored gelatin

Combine all ingredients, other than gelatin. Bring to a slow boil in a heavy pot and let boil for 30-60 minutes, stirring frequently. The longer it boils, the thicker the jam will become. Stir in gelatin packets, stirring well until dissolved. Pour into sterilized jam jars. top with hot lids and rings. Cold pack in hot water bath for 10 minutes.
