Strawberry Lemonade Brownies

These “brownies” are a fun twist on the traditional chocolate flavor. They are great for Spring or Summer and kids LOVE them! If Strawberry isn’t your favorite, substitute for raspberries or blueberries. You’ll love them either way!

Strawberry Lemonade Brownies

  • 1/2 cup lemonade powder mix
  • 1/3 cup sugar
  • 3/4 cup butter
  • 3 eggs
  • 1 tsp vanilla
  • 1 1/4 cup flour
  • 1/2 tsp baking powder
  • 3 tbsp lemon juice
  • 1 1/2 cups powdered sugar
  • 1/4 cup strawberry jam

Start by preheating your oven to 350 degrees and lining a 9×13 pan with parchment paper. Set aside and start mixing your brownie together.

Beat together lemonade powder, sugar, and butter. Add eggs and vanilla and mix until smooth. Stir in flour and baking powder. Spread in your parchment lined pan and bake for 18-20 minutes. Cool for 15-20 minutes.

Mix together powdered sugar, lemon juice, and strawberry jam. This will be a fairly runny consistency. That’s what you are looking for. We are making a glaze, not a frosting. With a rubber spatula or the back of a spoon, spread the glaze over the luke warm brownies being careful to no tear the brownies.

Refrigerate the brownies until completely chilled. Remove from pan by lifting out with the edges of your parchment paper. They cut much easier when they are cold.
