White Chocolate Almond Fruit Bars

White chocolate and almonds are one of cookings go-to flavor matchups. Add in fruit and you’ve got a match made in heaven! These fruit bars are simply divine. You can customize them to your own liking by switching up the fruit you use. We’ve tried them with almost every kind you could imagine and have yet to find one we don’t like. They really are that good!

White Chocolate Almond Fruit Bars

  • 1 cup butter
  • 2- 12 oz packages of white chocolate chips
  • 4 eggs – slightly beaten
  • 1 cup sugar
  • 1 1/4 tsp almond extract
  • 2 cups flour
  • 1 tsp salt
  • 1 cup blueberry fruit spread
  • 1/2 cup sliced almonds

In a small bowl, stir together the flour and salt. Set aside. In a saucepan, melt butter over low heat. Add 2 c ups of the white chocolate chips. Stir slightly until melted.

In a medium mixing bowl, mix eggs and sugar. Add in the butter and melted chocolate mixture, stirring just until combined. Stir in the almond extract. Gradually add flour mixture. Spread half of the batter into a greased cake pan. Bake a 325 degrees for 15-20 minutes (until edges are lightly browned). Remove from oven.

While the mixture is baking, warm and mlet the fruit spread over low heat, spread evenly over warm crust. Stir 1 up of white chocolate chips into the remaining batter. Drop the batter in small mounds onto the fruit spread. Sprinkle with almonds.

Bake again for 35 minutes, or until a toothpick inserted near the center comes out clean and top is lightly browned. Cool on wire rack, and you can cut into bars or serve straight from baking dish.
