Yummy Peach Crisp

I’ve spent the past few days in the kitchen canning lots of food from this year’s harvest. One thing our family LOVES to have in our pantry is a jar or peaches. We love to add them to lots of types of desserts, top it on our favorite waffles, or crepes, but mostly, just to eat plain in a bowl for a snack.

Whether you are a fan of peaches, or not, this delicious dessert is sure to satisfy your taste buds. It can be made with fresh peaches (perfect for this time of the year) or canned peaches, all the same. Give it a try and let me know what you think. I can guarantee you’ll be hooked!

Yummy Peach Crisp

  • 1 stick cold butter
  • 1 quart of peaches
  • 2 tbsp lemon juice
  • 1 cup brown sugar
  • 1 cup flour
  • 2 tbsp vanilla
  • 1 tsp cinnamon
  • 1 tsp cardamom
  • pinch of salt
  • 1/4 cup quick oats
  • 1/4 cup chopped pecans
  • whipped topping or vanilla ice cream (optional)

Preheat oven to 375 degrees. Lightly butter a 8 inch baking dish. Place the peaches in the bottom of the pan.

Melt 3 tbsp of butter in skillet. Add lemon juice, 1/2 cup brown sugar and 1 tbsp of flour. Stir well and cook for 5 minutes on low heat. Add cinnamon, cardamom, and salt. Cook for 1 minute. Remove from heat and add vanilla. Pour this mixture over the peaches.

Combine remaining flour, remaining sugar, and oats. Add remaining butter. With a pastry blender or fork, mix well until mixture resembles coarse crumbs. Add nuts, if desired. Sprinkle this mixture over the top of the peaches.

Bake until golden brown and bubbly, approximately 25-30 minutes. Serve warm with whipped cream or vanilla ice cream. This crisp can be served warm or cold, but we like it best when served warm.

You can easily double this recipe for a 9×13 sized pan and increase your baking time to 40 min.

Enjoy!
