Delicious and Hearty Instant Pot Fall Stew

We all have those nights when dinner is the last thing on our mind. I know, it happens to me more often than I’d like to admit. I will say that my Instant Pot has been my life saver for many a busy nights, for sure! If you have yet to buy yourself an Instant Pot, I would suggest starting with one like THIS. You can always size up, if you have a bigger family, but this size seems to do just fine for my family of 5.

I came up with this Fall Stew recipe one night when I was in a bind to fix something hearty, but fast. We were running to basketball games and gymnastics practice pickup, and it was snowing outside so we all wanted something to fill our bellies and keep us warm. This was a quick fix, in many ways and one that the family all requested to be made again very soon. I hope your family will enjoy it just as much!

Instant Pot Fall Stew

  • 1 lb ground pork or turkey sausage
  • 2 cups diced potatoes
  • 1 cup diced carrots
  • 1/2 cup chopped onion
  • 1/2 cup diced celery
  • 1 tbsp Italian seasoning
  • 1 tsp rosemary
  • 1/2 tsp ground black pepper
  • 1/2 tsp salt
  • 1 cup chicken stock
  • 2-3 cups water

Using the sauté, or browning feature on your Instant pot, cook ground sausage thoroughly until browned. Transfer to a strainer to drain excess grease.

Sauté onion, celery and carrots for approximately 2 minutes. The vegetables will not be cooked through at this point, but they will continue to cook later on in the process.

Add in Italian seasoning and rosemary. Combine sausage and potatoes with vegetable mixture. Stir in chicken stock and enough water to fill to the max fill line of your Instant Pot liner.

Affix the lid to the Instant Pot, and ensure pressure valve is set to seal. Cook on high pressure for 8 minutes. Allow for a natural release for 3 minutes. After the 3 minutes, you can do a manual release to release the remaining pressure from your Instant Pot. Once you are sure the pressure is fully released, remove lid from pot and fork-test the potatoes to ensure they are tender. You want them to be a soft texture, but not mushy. If more time is needed, simply replace the lid, reset the pressure valve and bring the pot back to pressure for a couple of more minutes, repeating the pressure release process.
